Black Bean Brownies – THE Best Gluten-Free Brownie

I turned 29 on August 3rd. My husband tells me (jokingly, of course) that this is my last good year. It’s all downhill from here. The wrinkles start. Gravity starts to cause things to shift. If that doesn’t make you excited about turning 29, I don’t know what will. 😉 In all seriousness, it was one of the best birthdays ever. When I arrived at work that day, these little beauties were hanging out by my desk.

What a great start to a lovely day! A handwritten note was attached. “Black bean brownies – gluten free.” WHAT?! That cannot be good. I was intrigued, yet grossed out. I was also extremely thankful that my co-worker’s wife went out of her way to make them and to make sure that I could enjoy a treat on my birthday. Coincidentally, my co-worker’s kid went to a 4-H class on gluten-free cooking the week before and learned how to make these brownies. Let me tell you, it was love at first bite. You’d never guess these brownies have beans in them. It’s still hard to believe.

If you’re gluten-free and looking for some decadent brownies, I dare you to try these.

Black Bean Brownies
15 oz. can black beans (unseasoned), rinsed & drained
3 eggs
3 Tbsp. veg. oil
1/4 c. cocoa powder
pinch salt
1 tsp. vanilla
3/4 c. sugar
1 tsp. instant coffee (optional)
1/2 c. chocolate chips

Combine all ingredients except chocolate chips in blender. Blend until smooth. Pour mixture into sprayed 8×8 baking dish. Sprinkle choc. chips over the top. Bake at 30 min. at 350, until the top is dry and starts to pull away from the sides of the pan.
